dozen eggs, boiled
½ c. mayonnaise or salad dressing
1 t.
mustard
1/8 seasoning
salt as desired
Paprika
for accent
Peel
and cut boiled eggs in half, removing yolk and place on a platter.
Place
yolks in a bowl and add mayonnaise, mustard and seasoning salt. Mash yolks and
stir well. Spoon
yolk mixture into individual half eggs, top with a sprinkle paprika. Can add
sweet pickle relish for a different version.
She
could never make too many of these.
Quick
Tapioca Pudding – Yvonne
3 T.
Tapioca
1/3
c. sugar
1/8
t. salt
1 egg
or 1T. & 2 t. powdered egg
3 c.
milk
2 T.
cornstarch
Beat
with mixer and let stand 5 min. in pan. Cook slowly until it thickens, stirring constantly. Remove
from heat and add ¾ t.
vanilla. Add T. of peanut butter if desired. After 20 min. stir once more. Makes
3 cups.

meat, spam or ham finely diced

hard-boiled eggs
½ t.
onion minced
½ t.
dried mustard
3 T.
mayonnaise to moisten

Buns or Butter Buns
1 c.
grated cheese
Mix
ingredients. Spread on buns. Place under broiler until warmed and cheese is
melted or wrap in foil and heat in oven. Serves 6-8. Or use salad dressing. Can
add sweet pickle relish.
Hawaiian Zucchini Nut Bread - Yvonne
3 c.
all-purpose flour
¾ t.
salt
1 t.
baking soda
2 c.
sugar
1 t.
ground cinnamon
1 c.
chopped nuts

eggs, beaten
1 c.
vegetable oil
1 c.
mashed bananas
1 8
oz. can crushed pineapple, drained
1 c.
shredded zucchini
2 t.
vanilla
Combine
first five ingredients, stir in nuts. Combine remaining ingredients and add to
flour mixture. Stirring just until dry ingredients are moistened. Spoon into
greased & floured loaf pans. Bake at 350 for one hour and 10 min. Cool 10
min. in pan.
